Trouble reaching my caloric goals...

I am 27, 6'2", 253 lbs. - I am trying to get down to around 190. My body is used to me starving it per se. For over 10 years I have routinely eaten one or two meals a day (sometimes under 1200 calories, sometimes over - more over than under) I am now trying to eat at least three if not four meals but I find that if, and when I start exercising regularly, I am going to have trouble recouping those calories. MFP set my caloric goal at 1750 for 2 lbs. a week - for the first few days I averaged under 1000 cal. (yes, I know, not healthy) and for this week I am trying to eat 1200 calories a day.
Here's my question - What can I eat that is healthy, good, satisfying, and meets my caloric needs? Feel free to look at my food diary - believe it is open to all MFP members.
