Chicken marsala---confused!

Why does chicken marsala have so many calories? Is it because of the gravy its in or the way its cooked? I usually scrape off the extra sauce so does it still mean that one 3oz piece is 300 calories? Oh and how many oz is a piece of chicken about 6.5 inches wide and 1cm thick?

    I worked in a resturant. Here is how we made chicken marsala.

    thin pounded pc of chicken (about 3 oz)
    dip in egg/milk mix
    dredge in white flour
    repeat

    place 1/2 stick of butter in pan while preparing the chicken.

    place the chicken in the butter, saute on each side

    remove the chicken from the pan and place mushrooms and marsala wine and saute, reducing the sauce as you do.

    place the chicken on the plate, pour the sauce over the chicken.

    So you have 1/2 stick of butter, 1 egg, 1/4 cup milk, 2 tbls white flour, 1/4 pound mushrooms and 1 cup marsala wine.

    Mmmmmmmmmmmmm it was delish!

    chicken marsala is high in calories for the way it is cooked, just like the above post stated, most chicken marsala recipes ask that the chicken be dipped in egg and flour before pan frying in oil. the flour on the chicken is what helps the gravy thicken.

    Other choice is to bake the chicken with lemon for fewer calories.

    So here is how we could redo that same recipe...
    Dip in egg substitute
    Coat with crushed fiber one cereal, or with panko
    Use 2 tablespoons of extra virgin olive oil instead of butter
    Keep the wine and mushrooms (marsala wine rocks, and most of the alcohol should burn off)

    Give it a shot! :)
