[Low Carb - High Protein] 2 Egg (Cheese Free) Tuna and Mushr

1. Break apart the eggs into white and yolk.
2. Whisk the white until it has doubled in volume. (Optional, can just whisk whole eggs if strapped for time)
3. Incorporate whisked eggs, 2tbsp cold water and 1tsp mixed dried herbs.
4. Empty the can of tuna, 50g button mushrooms, 1/2 tsp mixed dried herbs and 20g spring onion to a skillet and cook until most of the moisture from the tuna has gone.
5. Place mixture in a small bowl and set aside.
6. Clean out skillet (or use another one) and dry.
7. Melt 10g Nutelex butter in skillet on medium heat.
8. Add egg mixture to pan bringing edges and tilting pan to fill with egg mixture (approx 20seconds)
9. Cook for a further 10-20 seconds before placing the filling on top (spread evenly), add the remaining 1/2tsp of mixed dried herbs at this point.
10. Cover the skillet with a lid and allow to cook until the omelette doesn't stick to the pan.
11. Fold the omelette in half and serve immediately.

NOTES:

If the omelette looks cooked and it's still sticking to the pan, the base is probably still a bit sticky. The best resolution is to turn the heat up high for a moment with the lid on and wait until the moisture has cooked off. Shake the skillet every 5-10 seconds to see if the omelette has become free.

This omelette was mainly designed to remove the higher calorie foods such as the olive oil and cheese.

I think despite the lack of taste from the cheese, you will be pleasantly surprised at this light and filling alternative.
