Help for a Newbie!

Hi there! I've been on MFP for about six weeks now. Started off mostly using the app to track calories. I've recently started adding friends and checking out the forums. Holy cow! So much motivation and support! A little background on me:
Not new to trying to lose weight. Always used to be curvy and haven't been skinny since high school. I am 37, married, with three high energy girls (5, 4, 1). After I got married, I gained about 20lbs. Having three kids in about five years and not focusing on myself=gained another 30 or so. Yikes.
This time feels different, because I'm not TRYING...I am DOING It. But still, things can get overwhelming sometimes! My goal - to lose fat and tone up. I just wanna know, am I doing this right? Any suggestions?
- I do Zumba 2-3x a week.
- I try to run 1x a week
- I've recently added strength training via a Gravity Strength class at my gym. Doing this 1x a week, but working to 2x via the class or at home (Jillian Michael's 30 day shred).
-I keep hearing good things about Insanity (would this replace cardio, strength or both)?
Also, working on cleaning up my diet. I just started doing protein/whey powder shakes. More lean proteins (chicken? I don't do pork), veggies and whole grains.
Based on my weight and workout schedule, doing 1600 cals a day. I am assuming as i lose weight, this number will gradually go down?
Anything else I should be doing??? WOULD LOVE FEEDBACK!
