Spaghetti Squash Heaven (warning...food porn attached)

Split a spaghetti squash in half, sprinkle with sea salt, cracked pepper, and garlic. Bake halves upside down on a cookie sheet at 350 degrees for 30 minutes.

Dice 1/4 each of a yellow, orange, red, and green pepper, 1/4 of a tomato, and 1/4 of a white onion. Slice 6 large mushrooms and 4 green onions. Julienne 1/4 each zuchinni, oriental squash, and yellow squash. Add 1 and 1/3 cup of either Jimmy Dean lean turkey sausage crumbles or morning star recipe starter crumbles (same cals for both). Add 1 cup spaghetti sauce and heat all together in a pan.


Take spaghetti squash out of oven, scrape inside of one side onto plate. Top with more sea salt and cracked pepper and garlic. Top with 1/2 of the sauce mixture. Repeat with other half. Top with 2Tbsp shredded parmesean. eat!
