I'm looking for simple, easy recipes. I love to cook, but I want something healthy that doesn't require a ton of expensive, seldom used for anything or hard to find ingredients. Seems like every recipe I find I'm always missing ingredients.

One of my favorites is 1 pound of turkey, chicken or beef, can of low sodium black beans, bag of boil in bag brown rice, and a jar of salsa. Ground your choice of meat until done, add your can of black beans but make sure you rinse them off first, boil your rice separate and add it to the mixture and then add your jar of salsa. My picky kids even like this meal. It usually makes 6 one cup servings. 240 calories per serving if using turkey. You can also use this mixture and stuff it with a red pepper and bake for 15 minutes or until pepper is soft. I cut mine in half then stuff it.0

mapleleaf.com has some good ideas for chicken, especially their feta roll. Substitute it with low fat feta or goat cheese and yum!0
