I have heard of this diet called the waterfall diet and people are saying they have lost X amount of pounds of
water retention...

It means they have lost water weight that their body is carrying. Water weight makes little to no visible difference on your physical appearance until you are at a very low body fat percentage. I.e. for me, it makes the difference in ab definition. Less water = slightly more cut abs.
It will make you lose weight on the scales but the loss is actually not fat. So who cares?
They would lose the water weight by dropping carb intake and sodium intake. When sodium and carb intake increases, so too will their water weight. It fluctuates all the time.0 -
