So, yesterday, my 3 year old daughter told my husband that she wanted some chicken nuggets. He told her that McDonalds was a treat and not good to eat every day and that since she had it over the weekend, she wasn't getting another Happy Meal anytime soon (we are trying retrain her way of thinking......my husband and & I have given up fast food completely, and we want her to think it's only a once-in-awhile food).
My daughter told my husband that she didn't want McDonalds - she wanted the chicken nuggets that I made! I have been making baked chicken tenderloins in large batches and freezing them for easy food for her. I was pretty excited to see that her food choices were changing!!
It's not a NSV that directly affect me & my weight, but it definitely impacts the health of our family!

    such a veryy hard thing to do...change the way your kids view food! it has worked with my 11 year old do to facebook pics of how they make the nuggets and the pink slime with eyeballs in it! good job mama:0)

    Kind of. Here's what you will need:
    1 lb chicken breast tenderloins (or chicken breasts cut into strips)
    1 cup milk
    1 cup flour
    2 egg whites (lightly beaten)
    1-2 cups bread crumbs
    Salt
    Pepper
    Paprika
    Garlic Powder
    Onion Powder

    Prehead the oven to 400 degrees.
    Mix the flour with a little bit of salt, pepper, paprika, garlic powder, and onion powder (till it smells/tastes how you want it - I usually use about 1 tsp of each). Set aside.
    Lay your chicken out on a cutting board and tenderize it with a meat tenderizer.
    Dip your chicken into the milk and then dredge with flour mixture. Next, dip into egg whites and then dredge with bread crumbs. Lay all the strips out on a cookie sheet that has been sprayed with cooking spray. Bake at 400 degrees for 15-20 minutes or until chicken is cooked through (flipping once, halfway, so both sides are evenly browned).

    I seal portions into small bags using my Food Saver and freeze them for later use. We bake the frozen ones at 400 for 15-20 minutes (flipping once) and they are still very crispy and tasty!

    I love, love, love to cook! If you need any more recipes, let me know. I have a great one for chicken taco meat you can make in the crockpot and I also make a mean pork tenderloin (great served sliced, or shredded for pork bbq the next day).

    better then a weight NSV for sure!

    the only reason i got back on the healthy train was because of my daughter... i try to instill healthy eating but its hard to do that when u urself eat terrible foods... this is the first time in my life i have ever dieted to loose weight. i know i can do it without one but its the principle of it all that counts. one day, when shes older, she will realize that healthy eating is a life style not a life change.

    Nice!! That is awesome. I don't have kids but I hope that when I do I can help them make good choices like that.

    I make chicken tenders in a similar way, but I use panko instead of regular bread crumbs. I find they're crispier that way. Serve 'em with baked sweet potato wedges and some roasted broccoli---one of my fiance's favorite dinners!
