Eating back exercises - over a day or a week?

Hi, this is my first post after lurking for a while and I know there are quite a few discussions out there about this but am interested in getting some feedback.

I have about 20lb's to lose (have lost 9lb so far) and am aiming for 1200 net calories a day. Most days I walk 6 miles and go to the gym for 60-90 minutes, so I am often burning around 1000 calories a day. I usually eat 1400 - 1800 calories a day so some days I am netting 400 - 800 calories. However some days I don't do this much exercise and may eat more, so may net 1400 - 1800 calories.

I know most people agree that you should eat back your calories to avoid losing muscle mass etc but should I worry about this on a day to day basis or should I just work on averaging 1200 calories a day over the week?

Hope that all makes sense, any advice would be welcome! I do seem to be losing weight, just want to make sure it stays off
