Pretend pancakes

Ingredients
For the pancake mix:
2 eggs, separated
1 tbsp low calorie sweetener or agave syrup
1 tbsp oat bran
2 tsp vanilla extract
1 spray of light spray oil
To serve:
4 strawberries
4 tbsp blueberries
1 tbsp fat free Greek yoghurt
Method: How to make Pretend pancakes
1Whisk the egg whites until stiff then fold in the yolk, sweetener/agave syrup,
oat bran and vanilla.
2Heat a non-stick frying pan and spray with oil.
Add the pancake mixture a ladleful at a time and cook until they start to bubble,
this should take 1-2 minutes. Flip the pancakes at this stage and continue to cook
for another couple of minutes until golden and cooked through,
but be careful not to burn them! Serve with blueberries, strawberries and yoghurt.
