84 Cal Chocolate Muffins
So I LOVE baking but seeing as more baking = more calories I have stayed away from it. Last night craving got insane so I found this recipe online, it says they are 91 calories but when I calculated it on MFP (with an additional tablespoon of sugar) it came to 84 cal so it's in that range. The end result was good, but you can definetly taste the lack of sugar so as a warning it is not sweet AT ALL. It makes a good snack at work when Im craving something chocolaty so it'll do, next time though I may add a bit of cinnamon or nutmeg for more flavour even may some frozen fruits that won't add too many calories. Oh and one more thing, I felt like the suggest 400C was too high and be very careful, they bake very quickly 20 mins should be absolute max!

2 tablespoons unsweetened cocoa powder
1 1/2 cups all-purpose flour
3 tablespoons granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup skim milk
1 egg
4 teaspoons unsalted butter -- melted
1 teaspoon vanilla extract
1. Preheat oven to 400 degrees F. Spray a 12-cup muffin tin with nonstick cooking spray.
2. In a large bowl, combine the flour, sugar, baking powder and salt. In a small bowl, combine the milk, egg, butter and vanilla. Pour wet ingredients over dry ingredients. Stir until just blended (do not overmix).
3. Spoon the batter into the cups, filling each about two-thirds full. Bake until a toothpick inserted comes out clean about 20-25 minutes. Cool in pan on rack for 5 minutes; remove from pan.
