    totally gonna try this! the bf is vegetarian, so quinoa sounds like a great idea! and seriously I usually just boil some peas or some broccoli in the water with mac n cheese pasta, to make it healthier - this is way better!

    When I put this in the recipe calculator, I got 318 calories per 1/8th , and that was with vegetarian bacon (which is less calories than real), and I used low fat cheddar cheese, and light soy milk. Not for sure how you got 208 out of that! 2 cups of dried quinoa yields 8 cups of quinoa cooked, and that added the extra calories, I think?
