Help! I have a question on how to count the calories

Hi, my name is Angelique. I started doing the ultimate weight solution about 3 weeks ago and the first stage provides meals that are approx. 1200 Calorie per day with 30 % of these calories from protein, 45 % from carbs, 25% from fat. Most meals have 30 g of protein, and 30g of Fiber.

Now, being that I do not do well with fixed meals I started looking up the nutrients on food that I am allowed to eat to create my own meals. However, I am a bit confused on how to count the fat calories. Right now I am limiting my food intake to average no more that 300 Calories from fat and 540 from Carbs or 135 grams. My question is, according to the 25% of fat that I am not supposed to go over, am I required to count the fat portion from the 300 Cal. of fat or am I required to count them from the grams which would be 33g of fat that would make the 25%???

So far, I have been doing both but it does not make sense. I tend to be under the 300 but over the 33 grams. Is there anybody who can offer me some knowledge or have any better ideas about how to go about it? I also find it very hard to create my meals without going over on one or the other.
