Jerusalem Artichoke recipes?

I was just gifted a huge boox of produce from Bountiful Baskets and it includes a big bag of Jerusalem Artichokes which i am curious to try. I googled some recipes but everyone seems fond of making cream soups and gratins with them, not exactly what I'm looking for to lose weight! Any MFP folks have a recipe for them? Thanks!
