I'm aiming for Carb 40%, protein 30% and fat 30%.

It's difficult to get it exactly right, but getting there slowly
yesterday was 40/24/36
Saturday was 32/36/31

Obviously when one is over, I'm going to be under somewhere else, so which is the least important one to worry about hitting?

I use MFP's default settings. I try to exceed (go "in the red") their fiber and protein amount and stay under on carbs. I don't really care if fat is over or not, mainly because when I go over on fat it is due to eating nuts, nut butters, avocados, etc...the healthy fats. Fat doesn't make you fat, excess calories do!

I do 40/30/30 and am usually over in protein, under in carbs. Works for me.

Depends on a few things, but most people will probably say carbs.

Personally, as long as I'm within 10% I'm pretty happy. You can drive yourself crazy if you obsess too much about the numbers.

Here's a thought to avoid stressing out over it.

The body is working continuously, 24x7x365. It's not operating on a 24 hour daily clock.

Often, the macros will average out over time even though missed on a daily basis (as your protein did in your example).

So my thought is to look at your macro content on a weekly basis, as this will average out your daily variances. Monthly is even better, but weekly should give you a more timely feedback loop.

I often looked at mine on a rolling 7 day basis.
