I do a rub of garlic, rosemary and pepper then back or grill it. Simple and delish!0

I have a WW Pork Piccata recipe which I think is fantastic and easy.
*Slice 1lb tenderloin into 10-16 slices
*Combine 3Tbsp flour, 1/2 tsp salt &1/4 tsp pepper and sprinkle over pork slices (shake off excess)
* Heat 2 tsp of olive oil in non-stick skillet over med-high heat. Cook pork until heated through, probably 1-2 min per side (may need to cook several batches) then remove pork from skillet and set aside.
*In a cup, whisk together 3/4 C of chicken broth, 1/4 C lemon juice, 2 tsp cornstarch, 1/4 tsp salt & 1/8 tsp pepper. Pour this mixture into the skillet used to cook the pork (still med-high heat). Let simmer for 1-2 min then remove from heat and add 2 tsp butter and 1 Tbsp of capers (drained). Serve sauce over pork

I make a coating of minced garlic, olive oil, and dijon mustard. Put that all over the tenderloin, wrap in foil and bake. I open the foil for the last 10 minutes to "crisp up" the coating. Really good flavor.0

Slice some onions over the top. Smash a can of reduced sodium or 99% fat free cream of celery, chicken, onion, or mushroom soup over the top (pick just one). Roast covered until done or cook in crock pot.0
