Gourmet chicken ranch pizza on flatbread

Flatbread:

INGREDIENTS
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon dried oregano
1/8 teaspoon black pepper
2 eggs, lightly beaten
2/3 cup milk

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Lightly grease a rimmed pizza pan or baking sheet.
In a large bowl, stir together flour, salt, oregano and black pepper. Mix in eggs and milk; stir well. Pour batter into prepared pan and tilt until evenly coated.

Toppings:

INGREDIENTS
2 skinless, boneless chicken breast halves
1/2 cup Ranch-style salad dressing
1 cup shredded reduced fat mozzarella cheese
1 cup shredded Cheddar cheese
1 cup chopped tomatoes (optional)
1/4 cup chopped green onions (optional)

DIRECTIONS
Turn oven up to 425 degrees F (220 degrees C).
Place chicken in a large skillet over medium-high heat. Cook until no longer pink, and juices run clear. Cool, then either shred or chop into small pieces.
Spread ranch dressing over crust. Sprinkle on mozzarella cheese. Place tomatoes, green onion, and chicken on top of mozzarella cheese, then top with Cheddar cheese. Return to the oven for 15-20 minutes, until cheese is melted, but crust isn't burnt.

Yield: 8

    I forgot to add:

    The ranch is light ranch
    The mozzarella is light mozzarella
    The milk is skim milk

    This calorie input is based on those three things. You could probably make it less cals, if you were to use egg beaters, and reduced fat cheddar.

    That sounds good. I've been looking for pizza recipes since that is one of my all-time favorite foods.
    I wonder if it would work with the cottage cheese/buttermilk ranch recipe I found on here.
  • Is the flat bread put into the oven right after it is prepared? And then taken out to add the chicken, tomatoe, etc - then placed back in for 20 minutes?

    Recipe sounds AMAZING! I'll have to try it out!

    Sorry! Can't believe I forgot that! Bake it for 20-25 minutes, then take it out and add toppings and put it back in. :blushing:

    If you use a small cookie sheet, it's easily cut into 8 pieces, and one piece of the eight is a serving size. So... one eighth. LOL
