One Minute Flax Muffin - Low Carb

¼ cup flax seed meal
½ teaspoon baking powder
¼ teaspoon stevia powder
1 teaspoon cinnamon
1 egg
1 teaspoon oil
Directions:
1 Mix all ingredients in a coffee mug.
2 Micorowave for one minute on high.
3 If using frozen berries, microwave for 1:30 on high.
4 Smooth on some butter and enjoy!
5It will be moist at first, but as the muffin cools it goes away.


Never tried but it sounds ok.... wanted to share it

    I have made these in the past and thought they were pretty good. I forgot about them, thanks for the reminder.

  • Any idea what cals these are? I've got flax in the cupboard but the recipe I have takes a while with preparation n oven time...this seems perfect.

    It didnt state... I would try and figure it out for you but you will have different ingredients
  • Missing the stevia and replacing that with no cal sugar replacement, it looks approx 244 cals without fruit or butter. Unfortunately stevia looks quite expensive as in the uk it's harder to get hold of... So I'll try this tomorrow. If it's works ok, I'll try it with some small cubed apple in as well, hopefully will be nice with the cinnamon

    Sounds yummy! (and nutritious, filling, and fast!) Two quick questions though:

    Can I use Agave Nectar instead of Stevia (which you can now get in the UK, they're advertising it like crazy, but it's not for me)?

    and

    What exactly is Flax Seed Meal? From what I understand Flaxseed is also known as Linseed (which I discovered AFTER a very unsatisfactory shopping trip!) and it seems to come in different levels of fine-ness (<<is that even a word?) - confused!
