Under and over on Calories per day??

I have a really hard time staying under my daily calories the day after a really hard work-out (burn on average 1700+ calories). I'm about 1500 short the day of the work-out, so does going over the next day just balance it out? If not, anyone have any suggestions on how to kill my hunger without going crazy on calories? Thanks!!
