I switched to a vegetarian diet and am curious as to low carb snacks as well as iron rich food stuffs :) thanks. Also some motivated vegetarians friends on here would be nice.

    I'm no good at low-carb, but iron rich is easy. Cereal! I eat grapenuts, but they are all fortified.

    Most dark leafy greens are rich in iron (spinach, kayle, etc.). If you need extra iron get a juicer and start juicing leafy greens or start making green smoothies if you have a blender. They are delicious.

    Kale, spinach, pumpkin or squash seeds, beans, etc., are all high in iron. :)

    Do you have protein shakes? Mine is a soy based one. It doesn't taste great, but it boosts my protein and has a huge amount of iron in it too. It works well for me to just have that once day after a workout.

    Iron and Bs. I use Nutritional Yeast. Not active dry yeast. Not Brewer's yeast.

    Nutritional Yeast, is bright yellow. You can find it in some grocery stores in the Bob's Red Mill section. Loaded in goodies to keep you healthy.

    If you keep it handy, I have a recipe for a "cheese" sauce that is just to die for. You can have one tablespoon of butter for 100 calories or you can have half a cup of this fake cheese for about 97 calories. It's great poured over veggies on slathered on a baked potato.
