Quinoa salad w/ 40 cal tortilla!

Just made this for my lunch.
QUINOA SALAD RECIPE:
I basically threw this together with whatever I had in my kitchen. You can use whatever veggies you like. Also, I didn’t measure anything.
WHAT YOU NEED:
quinoa (i made a TON so about 1 c.)
cucumber
grape tomatoes
about 1/2 a red bell pepper
feta cheese (you can omit…but you shouldn’t. the feta MAKES the dish)
mysterious unmarked spice in my cupboard
HOW THOUGH?:
Cook the quinoa (1 c. quinoa to about 1 1/2 c. water)
Slice up your veggies.
Toss everything together in a bowl. Add feta last.
