Figuring out the balance

How is it I can end my day with an extra 400 calories to eat but have maxed out protein, only have 5 left for fats and 50 for carbs???

Seriously, I eat salad with lunch and dinner and even as a snack. I can't take any more salad in a day. What is out there that has more calories but low on carbs and fats??
