This morning the kids wanted blueberry muffins for breakfast. Instead of eating 3 smothered in butter, I stopped at 1 with no butter!:bigsmile:

    Thanks to each of you. As a single dad, it sure is tough to balance a meal without packaged processed food. I am working on finding a balance.:bigsmile:

    Options
    You can add some oat flour or whole wheat flour to increase the fiber and nutrition and keep you feeling full longer. Don't use the pre-packaged mixes. You can control the amount of oil, salt, and sugar if you create your own recipe from scratch.

    Thank you for the recipe, cmriverside!:smile: I will have to try to pick up the ingredients and make them some day. I am a recently divorced single dad (half time) and baking from the mix is the most I have ever done.:blushing:
