calorie intake vs weight loss

Hello all,
I am loving this website. Can I just ask, on this website and others it states that if you take in less calories than is needed to maintain, if the body receives calories it will store it as fat...
The question is:
How does the body know that it is trying to lose the weight so eating less and exercising more? Or will the calories constantly be added as fat storage?
It is something like the starvation factor I read somewhere.
