What would you put in a grazer's "healthy cookie"?

Hello,

I'm looking for some ideas. My mom asked me to make her some cookies which she can use as either meal replacements or quick, filling snacks. My mom is totally a grazer- she wants something that she can just sit at her desk and snack on while she's doing her work (she's a workaholic too). We had some cookies which her friend gave her- I think they were from weight watchers or something. They were intended to be meal replacements (but didn't have any nutritional info so I have no idea what they did for her). She had one of those tummy bands put in a few years ago, and while she doesn't really go get it tightened any more, it still restricts her eating.

She is also deficient on many, many vitamins. She does not eat healthy balanced meals, by any means at all, so I really want to try to stuff in whatever I can which will help her get at least some of her daily vitamins. From what I remember, she's deficient on iron, the omega-fats and vitamin D (and I think b12?)... I know there are others as well, I just can't remember.

I told her I'm going to make the cookies my way, but asked her if she wanted anything specific in them- her requests were pecans and dried cranberries. I want the cookies to have a good level of protein, along with any healthy fats and vitamins I can fit in there. I'm planning on making a couple different types of cookies, and any tips/ideas/suggestions/alterations would be appreciated! I will be using the recipe calorie counter to see what the stats for the cookies will be before making them... I understand that cookies really can't be all that healthy, but I'd like to try to keep a cap on how high the sugars/fats go as well.

These are what I'm thinking so far:

Peanut butter cookies with either flax or chia seeds (thinking flax, think they'd go better with the peanut butter), maybe put pecans in here too?

Oatmeal cookies with mixed dried fruits, maybe nuts too- cranberries, chopped dates, maybe raisins, but probably not if I use the other 2. I'm also considering putting some protein powder in here. I know someone who uses a vanilla protein shake which I've tried and it isn't too bad, will probably use some of that.

Or, I may possibly do a different type of cookie which focused on the vanilla protein powder... but I have no idea where to start with that.

Also, any ideas on what to use for the base would be appreciated too. I've made cookies from both peanut butter and oatmeal which didn't really need any type of base other than the pb or oatmeal, and was going to try that route again, but I'd love suggestions if anyone knows something I can use instead/as well. I'd like to stay away from all-purpose white flour.
