I was just searching through older post for new recipes to try, and noticed a few people looking for healthy cookies. So I decided to share one that I tried the other day that was so good.
1/4 c. butter, softened
1/2 c. packed brown sugar
1/3 c. granulated sugar
1 tsp. cinnamon
1/2 tsp baking soda
1/8 tsp. salt
1 egg
1 tsp. vanilla
3/4 c. all purpose flour
3/4 c. rolled oats
1/4 c. flax seed meal
1/4 c. wheat germ
2 oz. dark chocolate, finely chopped (I just used semi sweet chocolate chips)
1/4 c. dried cranberries (I just used craisins)
1/4 c. chopped walnuts
Preheat oven 350. Beat butter on medium for 30 sec. Add sugars, cinnamon, baking soda and salt. Beat until combined. Beat in flour. Stir in remaining ingredients. Dough will be a little crumbly. Makes about 30 cookies. Put on ungreased cookie sheet. Bake for 9 to 11 min.
I haven't figured out the calories but if anyone else does let me know.

I wanted to chyme in here and post some mods to this recipe that would really clean it up nutritionally:
replace the butter with 75% pure, unsweetened apple sauce, 25% canola oil
replace packed brown sugar with 1/2 cup (unpacked) sucanat or other natural unrefined cane sugar
replace egg w/ 3 tbsp liquid egg white
replace all purpose flour w/ whole wheat flour or spelt flour
try to find organic dried cranberries rather than regular to eliminate a heaping amount of refined sugar, trans fat or hydrogenated oil and unnecessary chemical additives.
These modifications shouldn't make any difference to the outcome of the cookie as far as taste goes, but will make a big difference to what your body thinks of it when you're breaking it down and using it.
Cheers :bigsmile:0
