My FAVORITE salad! Full of flavor.

I started adding different things together I love.. and this is what I ended up with. I eat this for lunch everyday.
1/2 tomato diced
1/2 avocado meat cut up
1/2 plum diced
4 cucumber slices diced
3-4 cilantro leaves cut up into tiny pieces
4-5 onion slices diced
1 handful of spring mix (I don't like too much lettuce in this salad and its not necessary because its very feeling with the veggies)
Mini shrimp ~20 (I get the kind from the frozen section that are shelled out and without tails).
Feta Cheese- Not much at all- I sprinkle a little bit over the salad. I crush big chunks of feta into smaller pieces. A little goes a long way.
Put all ingredients into a Tupperware container. Sprinkle with black paper. Add 1 top full of virgin olive oil. And add about a teaspoon of honey. Put on the top and SHAKE SHAKE SHAKE. Make sure its mixed thoroughly.

Side note- Occasionally I also chop up half a pear or add chopped pineapple. Add what YOU think is delicious!

I have never taken the time to add it up. But I guesstimate it to be around 350-400 calories. Depending on how heavy you go with olive oil, honey, feta. I use a very tiny bit of all of these.0 -
My Favourite Salad - Mainly for the dressing. You can add in more ingredients and veggies for variety
Green Salad with Mandarins
1 head green leaf lettuce
1 head red leafed lettuce
10 oz tin of mandarins – drained
handful of snow peas
1 red onion, thinly sliced
Dressing:
1/3 cup white wine vinegar ½ tsp dried tarragon leaves
1 TB Dijon mustard 1 TB white sugar
2/3 Cup light olive oil or vegetable oil Few drops hot sauce
Salt and fresh ground pepper0
