after buying the new HG cookbook, i decided to buy some whole wheat pitas. i bought the only brand i saw at the store which is thomas' sahara whole wheat pitas. i used one last night and when i was trying to fill it, the thing fell apart!

does anyone know of another brand of whole wheat pitas that holds up well?

  • Pitas can be tricky. Just a couple tips- the fresher the better, especially since the wheat gluten in whole wheat goods has a buffer of fiber and doesn't get quite as soft and gummy as processed foods. If you have a grocery store that has fresh pitas, definitely get those. Also, if mine have been sitting in the fridge for a couple days, I will microwave them just a little bit and this seems to really help in preventing tears. Just a few seconds will do, as cooking them longer can make them rubbery and weird... I do this with tortillas too.

    Would having a dish of water in the micro help? Possible steam them a little.

    These are really yummy and hold up well to food.

    Wet a paper towel, wring it out, flatten it and fold your Pita in it. Then nuke the towel and the pita together.

    The moisture from the towel warms & softens the pita and it'll cooperate.

    I just eat the pita without stuffing it and then dip and use a fork for the "stuffing..."
