1/4 cup non fat milk
2tsp Vanilla extract
3/4 cup EVOO
4 Large Egg whites

1 Cup packed light brown sugar
2tsp baking soda
2tsp cinnamon
1/2 tsp table salt
2 cups whole wheat flour (I use Hodgson Mill Insta-Bake whole wheat with butter milk variety)

1 medium apple diced well
2 medium carrots diced well

pre heat oven to 350 degrees, spray muffin tins (makes 18)

whisk all wet ingredients in a large mixing bowl
mix all dry ingredients in a medium mixing bowl (working out any clumps)
slowly add dry ingredients to wet ingredients mixing well
add in carrots and apples folding in well

fill muffin tins ( just barely to the top) and bake for 20-25 min.. they are done when inserting toothpick comes out clean


Enjoy!!! Kids love these! :-) and even my hubby who hates carrots LOL
