Egyptian Lentil Soup

This is how we make lentil soup in Egypt. Fast, easy and healthy.

Egyptian Lentil Soup

2 cups dry red lentils
10 cups water
2 medium sized carrots cut in slices
2 medium sized tomatoes cut in large pieces
1 large onion cut in large pieces
1/2 tsp cumin (You can add 1tsp if you prefer)


Salt and Pepper
Wash red lentils till water runs clear. Put lentils, water, tomato, carrots, and onions in large pot. Bring to boil, lower heat, and cover. Let simmer for 40 minutes.
Since I like the lentils whole in this recipe and don’t want it like a puree, I pass half the soup in a blender with the cumin , making sure I get the vegetables in blender (My kids don’t like to eat pieces of carrots, tomatoes or onions). I add lentils in blender to the other half in the pot. Season with salt and pepper and serve. My family adds fried croutons in their bowls.
Butter is optional (I don’t add butter; I add butter in bowls since I prefer less butter than family)

    Yes, this. Can I use any lentils I can find or is there a difference between using the red and some other kind? This sounds delicious.

    I don't know the difference, but I have never used the brown for soup. I don't think it will taste the same. I also think the red cooks faster and has a thinner outer layer. Not sure.

    We make it with red lentils. I don't think it will turn out the same with other lentils.
  • We use the brown in the Mediterranean. Tastes delicious!! You can also try mixing the two for a great mix of nuttiness and texture. After the lentils have cooked and cooled, put everything in a food processor (or use a hand blender) and then finish with a spot of olive oil and a sprinkle of parmesan cheese. OMG DELISH. And Sooooo healthy!

    Interesting! I just put some lentil soup on the stove and it's very similiar to yours, except I left out the cumin and added some spinach. I hope mine is just as tasty as yours!

    I use brown to make a similar soup - but I add in two celery stalks chopped up (leaves and all) and a can of fire roasted tomatoes instead of fresh tomatoes. I also throw in a handful of spinach at the end! The cumin gives everything such a nice flavor! Might have to make some this weekend!

    Thanks so much for sharing this recipe using red lentils. I typically use yellow and brown lentils, and they do have different (but both delicious) flavors.
