Does anyone have a good idea for something that could be used like a pizza crust to go with light cheese and veggie toppings?

Flat out bread or Roll-ups... they are usually near the deli section.

I used to use light english muffins for mini pizzas, but I've found something I like a little better than those. Try the arnold sandwich thins in multi grain or 100% whole wheat. They're good for mini pizzas and are 100 calories and 1 gram of fat. I've also used pita bread and whole wheat tortillas. If you're making it for more than just you and have the extra calories to spend, Boboli pizza crusts come in whole wheat now and they're also very good.

Oh I also want to add, if you try the sandwich thins, you might want to put a little cheese down first, and then whatever else you want. This helps keep them from getting soggy if you're using pizza sauce.

Tofayan Whole Wheat Pita. Toast the pita a bit first, then put on your sauce and cheese and veggies and toast some more. Yummy.
I have tried making my own whole wheat pizza dough, and it just comes out too dense ...
