Made This Last Night - Awesome Rolled Chicken

My husband is not dieting with me so finding a recipe for dinner we both can agree on sometimes presents a challenge. I made this last night on a whim. I had no recipe to go by so this is my own. It was so good I thought I'd share. This recipe is not open for criticism, just enjoyment.

What you'll need:
3 TBSP Olive Oil
2 TBSP Balsamic Vinegar
2 ounces Red Wine
3 Thin Sliced Chicken Breasts
1/4 White Onion Chopped ( a little over a 1/4 of a cup)
2 Cloves Garlic Chopped
1/2 Cup - 3/4 Cup Part Skim Ricotta Cheese
Salt and pepper to taste
Toothpicks
Frying Pan
Bowl
Baking Dish/Pan

What to Do:
Add Oil, Vinegar and Wine to a pan. Put on Medium Heat.
Saute Onion and garlic until onion is almost clear.
In a bowl mix sauteed onion and garlic with ricotta cheese and salt and pepper.
On a pan place a hefty spoonful of the ricotta mix in the middle of the chicken.
Wrap chicken around the filling and pin with toothpicks.
Brush the oil-wine-vinegar used to cook the onions and garlic on the rolled up chicken.
Cook at 350 degrees for 15 minutes.
Remove from oven.
Brush another coat of the oil-wine-vinegar mixture.
Bake at 250 for 15 more minutes.
Let cool, remove toothpicks and serve!

*My husband said next time we should add pine nuts to the filling for a nice crunch.
** I don't know how to fix my pictures no matter how I re-size them they never come out right.

    Pine nuts would be a nice touch. I'll have to try this. Thanks for sharing!

    I think you've done a great job! Don't worry about the pictures - they're just fine. I'm going to try this tomorrow night. I don't have pine nuts (but sounds great). I'm going to add feta to the ricotta mixture. We'll see. Thanks!
