Chilli Bean Tacos

Had this for dinner last night and it was delicious

2 Tins of chopped tomatoes (400g/ tin)
1 tin Kidney beans
1 Tin Black eyed beans (or another bean if you prefer
1 large onion chopped
2 garlic cloves, crushed
1 tsp hot chilli powder
2 tsp cumin powder
1 red chilli, chopped
1 tbsp oil
Fresh coriander (i didnt have any so missed this out)

Fry the onion until soft, add the garlic, chilli and spice powders fry for a further minute. Add the tomatoes and simmer for 20 minutes to reduce. Add the beans and continue to simmer for another 10 minutes. Stir in lots of chopped corainder.

Serve in crunchy taco shells, with lettuce and a little grated cheese and a drizzle of sour cream.

This made enough to fill 12 taco shells and worked out at 60 calories per shell for the bean mixture. I will be making it again and using it as a veggie chilli and serving it with rice.

Very easy to make, very cheap and all stuff you could have in the storecupboard apart from fresh corainder
