Fish recipes
I need some good recipes for fish. My wife has never been much of a meat or fish person. She likes chicken and ground beef but that is about it. She said she would try fish as long as it doesn't have an overbearing fish taste. Any healthy recipes or certain type of fish ideas would be great. Thanks

Try soft poaching the fish. It not only takes the "fishy taste" out of the fish, but it doesn't stink up the house when you cook it. Plus, soft poaching makes the fish soft and juicy, not dry so make sure you don't boil the fish, but soft poach it.
Just get a sauce pan large enough in diameter to fit the piece of fish comfortably. Fill the sauce pan about 1/4 of the way up or so that it covers the fish only 1/4 of the way up. Bring the water to a boil, then reduce the heat to a low so that it boils softly like soft waves not bubbles. Place the uncooked fish in the pan and cover. Depending on the size of the fish, i.e. thickness, is what you base cooking time. For a fish about an inch thick, soft poach about 3 minutes, then take the cover off, turn the fish, recover, and finish cooking. You can also soft poach with the lid off, just add about a minute or so on each side.
Tips: I'm on a really strict diet so I flavor my poaching water with Sriracha. It's delicious and it infuses a slight chili flavor without the spicy hot (I like it spicy but many don't). Depending on how strict your wife's diet is, you can also use coconut milk to poach or if on a strict diet, you can use a soy milk or almond milk (it's low in fat) and add a teaspoon of coconut extract to it. Kind of gives it a Thai kick to it. Hope this helps.0
