Greek Stuffed Tomatos

I modified this recipe based on a book called, "Vegetarian Cooking Around the World"
Give it a swing!

1/2 cup feta cheese
1/4 cup bread crumbs (I used panko)
4x super ripe medium sized tomatoes (you want them to be completely red the whole way through)
2 tbsp parsley
2 tbsp green onions
1/4 large red bell pepper
3 tbsp extra virgin olive oil

First, preheat your oven to 350 degrees.
Next, carefully cut the tops off of each tomato, removing the stem. You want to cut them around the widest part of the tomato.
After the tops are removed, set them aside. Core out the pulp of the tomato and put it on your cutting board. Remove all the seeds you can. Chop it coarsely and put it in a small mixing bowl. Do this for all of your tomatoes.
Next, coarsely chop up the tops of the tomatoes.
Finally, add in the feta, panko, parsley, onions, pepper, and olive oil to the bowl and mix.
Scoop 1/4 of mix into each tomato.
Bake for 15-20 minutes, until steaming.

Makes 4 servings.

    Oh my god, yes please. If you wanted more protein, you could easily throw some deli slices of turkey or roast beef in there, too. Yum!

    EDIT - lol I just realized it's called "Vegetarian"... well if you didn't want it to be vegetarian, you could do the above ^^.
