total calories?

here's something i've often wondered about:

when tracking calories, say for bacon, you add up the calories per slice, right? so, say you fry that bacon without adding any other fats (why would you, but just being very precise) and then you fry 2 eggs in that grease. would the calorie count be for the bacon and the 2 eggs, or would it be the bacon, 2 eggs, and the grease the eggs were fried in? wouldn't the grease from the bacon already be included in the calories of the slices of bacon?

also for steaks and other beef, the calories are often displayed in the raw weight of the meat, and since that easily drained or removed fat varies by cut and type, how do you know how many calories there are left in the meat after it's drained, especially if no other fats are added? it seems like the difference in calories would be staggering or at least worthy of being more precise.

what say you? is there a general consensus that i've totally missed all these years?
