I am in need of some quick/easy (or just any in general) vegetarian meal ideas! I am also an athlete, so any ideas for high-protein/low calorie meals are appreciated! :smile:

    I'm also a vegetarian athlete and love to cook. I recommend the student vegetarian cookbook for some quick and easy recipes. It's especially good if you're on a tight budget or only need to cook for yourself. I also love looking at the vegetarian recipes on skinnytaste.com. For high protein and low calories I would turn to bean soups. Add some rice to make the complete protein or enjoy them on their own.

    My favorite lentil soup recipe:
    1 small onion
    1 stalk celery
    1 carrot
    2 cups dry lentils
    2 Tbsp olive oil
    8 cups vegetable broth/water
    1 bay leaf
    salt/pepper to taste

    Just dice all the veggies, throw everything in a pot with the lentils and simmer for an hour. Voila! Enjoy!
