Any hikers out there?

Hi! I wondered if there are any hikers out there. Particularly those familar with the NC mountains. My gift to myself, my "reward" for getting through 90 days of P90X is a hiking trip. I know nothing about it but I do know that I want to find some good hiking shoes that are not too expensive, I want a beautiful view, hopefully with a water fall and I want it to be a challenge but not too much of one since I am bringing my hubby and my son who will be just about to turn 4 at the time. Any suggestions please?
