Anyone have a good eggplant recipe they want to share?

    Grilled, put over spaghetti squash with a homemade tomato sauce with yellow squash, chopped tomatoes, Zucchini, onions and peppers. Top with 1/4 cup of Mozzarella or Parmesan cheese, melted.

    I buy fresh eggplant at the local farmer's market when the season is upon us. I make this recipe and freeze the eggplant after prepared. I then pop a few pieces in the oven, or use it with tomato sauce.

    1 large eggplant, skinned and sliced into circles (approx 1/2 inch) thick. (I like it thin)
    1 -2 eggs or egg substitue (depending on how much eggplant you have..
    flour
    breadcrumbs (you could use panko)
    Italian seasoning - mixed into breadcrumbs

    Make sure slices are dry. I use three pasta bowls and assembly line... First coat peices in flour, then dip in egg wash, then into the breadcrumbs. Place on pam-sprayed cookie sheets and freeze if not using right away - you can then transfer into baggies or freezer ware after they have frozen up.

    If using right away, bake in 400 degree oven for 10 minutes or until browned.

    I eat the peices as a side dish with either catsup or warmed tomato sauce. You do have to like the taste of eggplant to appreciate this recipe.

    Eggplant Snack Sticks (broiled)
    and
    Eggplant Rollatini (baked)

    The Rollatini isn't very healthy as it is, but it's it's fairly easy to adjust the recipe to be not too bad.
