The Mexican Casserole

Just wanted to share a receipe that someone shared with me....if you change anything, just scan in the barcodes from your products and add them to your receipes. Easy!!
1 pound turkey
4 (1/4 cup raw=3/4 cooked) brown Mahatma Rice already cooked and drained
1 pkg low sodium taco seasoning
1 can Enchillada Seasoning Can (El Paso)
1 can petite tomatoes
1/2 cup Mexican Cheese (more or on the kids side)
1/2 cup onion, diced
Cook rice. While cooking, put turkey and onions in pan to cook, drain and rinse. Add taco seasoning per instructions. Let simmer. Once rice is done, drain well. Add rice to 13x9 pan, then half of Enchillada sauce on top, then turkey and onions, then diced tomatoes (drained). Bake for 20 minutes, longer if items got cold. Then top off with cheese and bake 10 - 15 minutes longer. I always put the cheese, then add more to the family side.
This is great with some 100 calories guacamole, fat free sour cream and fresh salsa from the market. (I get mine in the produce section of Wal-Mart.) Divides into 9 servings, 336 calories, 35 carbs, 11 fat, 22 protein, 3 sugar, 557 sodium.

I make something similar, but I also add salsa verde to the meat...and use shredded cooked, seasoned (with onion and garlic powder and cumin) chicken! I place that in bottom of the pan, helps it hold together well. Also, no rice, Im not supposed to eat it, I use black beans for added protein/fiber/complex carbs, and corn!!0
