Basically it uses banana + baking powder to replace the egg.

I have THE best egg free cupcake book, its designed for vegans but since Im allergic to eggs its perfect for me, it uses soya milk and cider vinegar to make the batter rise, and I've made some awesome egg free cupcakes with it: choc, vanilla, oreo, gingerbread etc. I also have the cookie version of the book too.

1 can pure pumpkin, 1 box cake mix - mix it up - cook as directed but check afew mintues earlier than the box says....my whole family loves it with a devils food cake mix and they don't even like pumpkin!! Spice cake is yummy too.

Made this again today - so good!!
