Made these muffins this morning and they were sooo good! Thought I'd share!
Mix together dry ingredients:
2 1/4 c. whole wheat pastry flour
3/4 c. oat flour
1 tsp. baking soda
1 tsp. baking powder
Mix together wet ingredients:
1 c. greek yogurt
1/2 c. coconut oil
3/4 c. egg whites (6 egg whites)
3/4 c. crushed pineapple
3/4 c. honey
1/2 c. sucanat
1/2 c. stevia in the raw cup
Fold wet ingredients into dry ingredients. Then add in remaining ingredients:
2 c. shredded zucchini
1/2 c. shredded unsweetened coconut
1/2 c. sliced raw almonds
Prepare muffin tins with liners, and spray with cooking spray. Fill muffin cups 2/3 way full. Bake at 375 for 15 minutes.
SO yummy!!! By my calculations they were 160 calories each.
