Dinner help!

I had a big lunch today and have about 591 calories left for the day. I plan on going to the gym later, but I don't want to go over 591 for dinner regardless. Normally my dinners are around there but they get so boring after a while. Normally I have chicken breast with veggies and/or salad and low cal mashed potatoes or rice or whatever.

Any ideas for a lovely quick and easy dinner that is yummy and healthy?

I'd like it to be exciting too!

P.S. Please provide me with the nutritional value as well! Thanks so much!

    Tonight I think I'm having Salmon, asparagus and pinto beans.
    Salmon 140 cals for 4 oz
    Asparagus 20 cals 5 spears
    Pinto Beans 60 cals for 1/4 cup

    Either that or raisin bran.
