Eating when not hungry!

How on earth am I supposed to consume enough calories?
The food journal is pretty strict when it comes to the proteins. I don't like too many carbs.
I'm constantly at least 500 or 600 calories below the suggested daily intake. On the days when I do my hard cardio workouts, I'm REALLY below. I just don't have the appetite to consume so much food.
I refuse to eat fast food or other high calorie, high fat, and high sodium foods. The type of foods I do enjoy boost up the calories are also high in protein. Not sure what to do..

Don't torture yourself. High activity helps. I do alot of vigorous bicycling. Some days I rest. Rest days, I am often over my limit, but I don't worry about it. The active days over-run those extra calories. Forcing yourself into hunger will only make you crack.
Make sure you keep yourself happy.0 -
Try adding more healthy fats to you diet. Nuts, olive oil, avocados, etc. Don't worry about low fat or fat free dairy, get the full fat and enjoy it! It's only 4% in most cases anyway. That way you get more calories and don't have to eat when you're not hungry. Add more protein, no problem with that! You body can use it just like carbs or fats. You can customize your goals here so that you can have more protein and less carbs. Not an issue! I adjusted my protein way up, carbs and fat way down. How my doctor wants me to eat!0

The default protein levels are generally known to be too low. You can change the percentages or just go over. I'm always over on protein daily.0
