The other day I boiled some chicken breasts to shred them for a recipe and I had one leftover so the next day I cubed it up with a little light Mayo and light miracle whip and made a sandwich. I loved it and waaaaaayyyy less sodium than lunchmeat.
So I was wondering if I boiled a few chicken breasts let them cool then diced them up for future use do you think I could freeze them in 2oz portions and pull them out and mix them up when needed??

Yes. I do this all the time. Just don't refreeze them after defrosting.0

yep, I do it too. I'll cook 8 or 10 boneless skinless breasts at a time and throw some in fridge and some in freezer. I reheat them in microwave at half power so they don't dry out too much.0 -
