I've found that stretching is really important to lean out the muscles. I've always had big, strong calves (probably from carrying around so much weight) - but as I've been diligently doing calf stretches and making sure to use the whole range of motion - they're starting to get a little leaner.

I would say reduce incline or reduce speed, but not both. do you run on your toes? or step with your whole foot? it depends on where you disperse your weight, and possibly your shoes. if you step mostly on the outside of your foot, that could lead to bulking.

pilates and yoga put emphasis on making lean muscles. you could probably get away with doing it once a week.

calves turn into little balls of power so you have to stretch stretch and stretch again. Yoga or pilates are great ways to get a nice workout in that stretches everything making your whole body look leaner and taller.
