Salmon noodles

Here is an idea for a yummy lunch or dinner:
Cooking time: 5 mins

39g carbs
21.9g protein
17.2g fat
Ingredients:
100g salmon fillet
50g egg noodles (or one nest)
45g Philadelphia light cream cheese
1/2 tbsp tomato purée
Pinch each of:
ground black pepper
paprika
dried chilli flakes
(adjust seasoning to taste, a pinch of each gives a background heat but add more if you like your food firey!)
Method:
Microwave salmon, with a splash of water, in a dish with the lid loosely on for 90 secs on med power. (may need longer if a particularly chunky fillet!)
Prepare noodles as per pack instructions then drain.
Add all the other ingredients to the pan with the noodles and about 20ml water. Stir over a low heat for a minute to warm through the sauce.
Remove salmon from microwave but do not drain. Flake the fish then add salmon and cooking juices to the pan. Stir briefly then serve.
I like to have mine with a generous handful of sugar snap peas but any of your favourite fresh veggies Would be great.
