I have issues with posting pics here, which is why I generally direct things straight to the blog, but here's the basics:
3 egg whites
1/4 tsp cream of tartar (optional, but it helps the whites whip up better)
1/3 cup sugar
3/4 tsp vanilla extract
2 oz dark chocolate (I used 70%, but the original recipe calls for semisweet)
Separate eggs. Add cream of tartar to whites and beat until foamy. Slowly add sugar & vanilla while beating to soft peaks. Fold in chopped chocolate. Fill a piping bag or other zip top bag, and pipe onto parchment paper. Bake at 250 degrees for about 45 minutes. Let cool completely before removing.
I got 33 meringues out of this recipe, but they were pretty small. Nutrition: each 19 calories, 2 carbs, 1 gram of fat, and 1 gram of protein. Not super quick, but very easy and very tasty. I'm planning to make several variations in the future.0
