I make this recipe every couple of weeks or so because it is so easy and doesn't require a crust. I just sat down and did the math (and used MFP) for the ingredients and I figured out it is approx. 576 for a quarter of the pie plate.
**6 egg whites
**2 cup. half and half cream (I used light)
**3 X 1/3 cup grated cheese (I used Kraft Tex Mex)
**green onions (I used 2....hard to believe there are calories for the green part!)
**package chopped frozen spinach (thaw and squeeze out water. If even squeeze it also in a paper towel to really get out the excess water)
Whisk together. Grease a pie plate and bake at 350 degrees for 50 min. or until cooked. My boyfriend and I eat it with a little salsa on the side.
Use can also add cooked bacon or ham but I don't because I never have it on hand and it tastes fine without it.

Sounds yummy, especially with the salsa on the side!
Sounds similiar to my spinach quesadillas I love at Mexican restaurants!0 -
