Pineapple Upside-Down Cake (Cooking Light)
My mom used to make this all the time. Would always let me drink the pineapple juice!! haha
I was craving it. And found a recipe on Cooking Light! I just made it!! YUMMM!!!!
Pineapple Upside-Down Cake
1 (20-ounce) can pineapple slices in juice, drained
Cooking spray
1/3 cup fat-free caramel topping
9 maraschino cherries, drained
5 tablespoons butter
2/3 cup sugar
2 large eggs
1/2 cup low-fat buttermilk
1 teaspoon baking powder
1 teaspoon vanilla extract
1/4 teaspoon salt
1/4 teaspoon baking soda
1 1/4 cups all-purpose flour
Preheat oven to 350°.
Press 9 pineapple slices between paper towels until barely moist; set aside. Reserve the remaining pineapple for another use.
Coat a 9-inch square baking pan with cooking spray; drizzle caramel topping over bottom of pan. Arrange prepared pineapple slices in a single layer over caramel; place 1 cherry in the center of each slice.
Place the butter in a large microwave-safe bowl. Cover and microwave at high 1 minute or until the butter melts. Add sugar, stirring with a whisk. Add eggs, and stir well. Stir in low-fat buttermilk and next 4 ingredients (buttermilk through baking soda). Lightly spoon 1 1/4 cups flour into dry measuring cups, and level with a knife. Add flour, stirring just until blended (do not overstir). Pour the batter into prepared pan.
Bake at 350° for 30 minutes or until a wooden pick inserted in center comes out clean. Cool for 1 minute in pan on a wire rack. Place a plate upside down on top of the cake, and invert onto plate. Cool completely. Cut cake into squares.
Yield: 9 servings (serving size: 1 cake square)

Here is my finished cake. The pineapple are more on top of each other because I didn't have a 9 inch square baking dish, only an 8 inch one. And I baked it an additional 5 minutes when testing it after the suggested 30 minute baking time left it a little too wet still (due to the smaller pan).

Because you bake it with the pineapple,cherries, etc on the bottom of the dish...and when it's done......you then invert it onto the plate and the stuff that was on the bottom becomes the ooey, gooey top!!

Wanted to update this thread with a Pineapple Upside Down Cake that I made last night for a dinner party, and it was a great hit.
1 box of Angel Food Cake (fat free)
1 can pineapple rings in natural juice
Marischino cherries 6
toasted coconut - 1/4 cup
brown sugar - 1/4 cup
cooking spray or melted reduced fat butter
Use the juice from the canned pineapple to make the cake mix (instead of water). Add water as needed to meet required liquid measure.
Spray the bottom and sides of an 8x8" or 9x9" glass casserole dish lightly with cooking spray or butter.
Put the brown sugar on the bottom of dish in a thin layer.
Sprinkle coconut lightly on sugar.
Put pineapple rings flat on the coconut, side by side. Place 1/2's of pineapple rings around the sides like wheels.
Pour cake mix into dish and bake at 350 degrees for approximately 40 mins.
Separate cake from dish with a butter knife and flip onto a platter.
Serving size is 1/8th of the cake.

Chol 0
Sodium 5.9mg
Carb 42.9g
Fiber 1.2g
Sugar 16.2
Protein 2.9g
I served mine with real whipping cream, but you could use fat free if you desired. Calories are extra for that :happy: Company LOVED this!!
Also, if you left out the coconut and cherries, it would be totally fat free and a few calories less.0
